Delicious Easter Cookie Recipe
with only 3 ingredients!
This Easter cookie recipe is so quick and easy, and tastes delicious! The kids will have fun cutting out Easter shaped cookies, and with only 3 ingredients they are so simple to make.
I find these shortbread cookies are great to keep on hand for when friends and family drop by for a cup of tea on Easter morning. They are also great as Easter gifts, or to pop into an Easter basket!
Easter Cookie Recipe
Ingredients, to make 10-12 shortbread cookies
- 6 oz (180 g) flour, sifted.
- 4 oz (120 g) butter, at room temperature
- 2 oz (60 g) caster sugar
Preparation:
- Beat together butter and sugar until creamy and smooth.
- Stir in flour until mixture is combined.
- Turn out mixture onto a floured surface, and use your hands to clump the mixture together into a mound. Roll out until 1 cm thick (just under 1/2 in). For a lovely light and crumbly texture, don't over-handle your dough.
- Cut out your bunny-shaped cookies (or what ever shape you have on hand!) and place them on a baking tray lined with baking paper. Refrigerate for 20 minutes or so.

- Pre-heat your oven to 325°F/160°C. Bake cookies for 15-20 minutes, until they are just starting to turn golden.
- Cool on a wire rack and store in an air-tight container.
