My Easy Valentine's Day Cake

I'd like to share an easy Valentine cake I made.

My sweetheart has a sweet tooth, so last year I decided to bake a Valentine's Day cake for him as my official gift. This may seem like a simple thing to all the ladies out there who can actually bake, but to me it was a mammoth task.

I found a super easy pound cake recipe online and my second attempt paid off (with a little help from my teenage daughter, who couldn't stop laughing at me!). This is it:

2 Cups All-Purpose Flour
2 Cups Sugar
6 Eggs
2 Sticks Butter
1 tsp Vanilla
1 tsp lemon or vanilla extract


Cream sugar and butter. Add eggs and vanilla. Add in flour and beat for about 5 minutes. Pour into heart shaped pan. Start in cold oven. Bake for 70 minutes at 350 F.


I decorated the cake with icing sugar, chunks of yummy chocolate, and fresh strawberries, and presented it to him on Valentine's day morning.

Needless to say, I was queen for a day. He loved it... and so did I!

baking soda?

Sounds yummy, but don't you need to use baking soda, or else self-raising flour?

To be honest, I can't remember whether it was actually self-raising flour! Baking is not one of my talents (that's probably the understatement of the century :)) and this recipe is from scribbled notes that I found in my diary from last year. I do remember that I got the recipe online and the cake turned out fine, but I haven't tried to repeat my big-baking-experiment, so who knows? lol!
